I love the start of fall! It signals the return of hearty soups, stews and nothing goes better with soup than some warm, delicious homemade bread,
I especially love this recipe because it utilizes just a handful of ingredients which makes it easy to put together...and it doesn't take much time at all!
It's an incredibly versatile bread as well because with just a few changes to the basic recipe, you can make it sweet or savory. I make it just slightly sweet to go with certain soups and savory for serving with Italian dishes or pastas.
Below I'm sharing how I made it sweet. To make it savory, simply replace the coconut oil or butter (ghee) with olive oil and add some Italian seasoning and garlic powder to taste (and perhaps a bit of Trader Joe's Soffritto seasoning)!

Almond Flour Bread
ingredients
* 5 large eggs
* 5 tablespoons "refined"' coconut oil, melted (if you use virgin coconut oil, it will taste like coconut) or melted ghee or avocado oil
1 tablespoon maple syrup (or to taste)
* 1 teaspoon apple cider vinegar (don’t skip this - helps the bread rise)
* ¼ teaspoon salt
* 1 ¾ cup almond flour blanched, super-fine (7 oz)
* ½ teaspoon baking soda
Instructions
* Preheat your oven to 350°F. Grease an 8-inch loaf pan (a 9-inch pan will be too big unless you double the recipe). You can line the pan with parchment paper with an overhang for easy removal (or simply spray your loaf pan well-I’ve done both and both work just fine
* In a medium bowl, whisk the eggs. Whisk in the coconut oil, vinegar, salt, almond flour, and baking soda.
* Pour the batter into the prepared pan.
* Bake until the bread is golden brown and set, and a toothpick inserted in its center comes out clean, 30-40 minutes (check at 30’minutes to allow for oven differences
* Cool for 10 minutes in the pan on a wire rack before gently releasing the bread. Carefully run a knife along the edges if needed. Cool the bread to room temperature, about 20 minutes more, before slicing and serving-if you can!!!
VARIATIONS
Savory version:: make it savory by substituting olive oil for the coconut oil adding ½ teaspoon each of garlic powder and 1 teaspoon of Italian seasoning.
Sweet Version: make it sweet by adding more maple syrup (about 2 teaspoons or to taste, 1 teaspoon of vanilla, and 1 teaspoon of cinnamon. In this version, you can use virgin coconut oil for a slightly sweet coconut flavor or unsalted butter.
