Cauliflower Gnocchi with Veggies


I put this little dish together and it was phenomenal! Delicious as a meatless entree or a perfect side dish with any protein!


So easy to put together using my “the always pan” from Our Place and I do feel like I always use it!!

Cauliflower Gnocchi with Veggies

• Ingredients:

Cauliflower gnocchi (l bag Trader Joe’s)

1-2 cups baby spinach

1 cup halved cherry tomatoes

1 heaping tablespoon minced garlic,

2 tablespoons butter ( grass fed preferably) or olive oil

salt

pepper

1/4 cup Fresh basil

1/4 Grated Parmesan

• Instructions:

1. Sauté the minced garlic and cauliflower gnocchi in butter olive oil until crispy, about 7 minutes

2. Add halved cherry tomatoes, cooking until the tomatoes soften.

3. Stir in baby spinach and cook until wilted.

4. Season with salt and pepper to taste.

5. Add Parmesan

6. Top with basil
