Cranberry Cheese Nut Bread


This cranberry bread is delicious, moist and so festive.


The little flecks of red from the cranberries make this so pretty and perfect for Christmas!


I’ve been making this and gifting this bread at the holidays for years and it always gets rave reviews! It’s really simple to make.

Cranberry Cheese Nut Bread

Ingredients:

2 1/2 cups all-purpose flour

1/2 cup sugar

1/2 cup brown sugar

3 1/2 teaspoons baking powder

1 teaspoon salt

3 tablespoons avocado oil (any neutral oil)

1 1/4 cup milk your choice (I used almond milk, but any kind is good)

1 egg

1 tablespoon + 1 teaspoon lemon zest(orange zest is good too)

1/2 cup chopped nuts

1 1/2 cups shredded cheddar cheese (6 oz)

1 cup cranberries, cut in halves

Instructions:

Heat oven to 350 degrees. Grease or line loaf pans with parchment paper (1) 9x5x3 or (2) 81/2x41/2x21/2) mix all ingredients until combined but don’t over mix. Pour into pan(s). Bake 9in for 55-65 minutes, 8in loaves for 55-60 minutes. Cool slightly and then remove from pans and cool completely before slicing…if you can wait!!

To store: wrap and refrigerate for up to one week.
