Easy Chicken Parmesan


This just might be the easiest Chicken Parmesan you’ll ever make!! Its so easy and every bit as delicious as more complicated versions.

These green beans are perfect with it and are easily prepared while the chicken roasts.


I used @ourplace -“the always pan”to make them. This is my favorite pan! We use it at least once every day! It's such a beautiful pan and everything easily slides right out of it!


The whole meal is Easy AND delicious…just the way I like it! I hope you’ll like this recipe too!!


Easy Chicken Parmesan

ingredients:

2 boneless chicken breast (about 12 oz)

1 cup panko bread crumbs

Salt and pepper to taste

1 tsp Italian seasoning

2-3 tablespoons melted butter

1/3 marinara sauce (I used Rao’s-enough to lightly cover each breast)

1/4 cup grated Parmesan cheese plus more for garnish

1/4 cup thinly sliced basil

12 oz green beans, washed and trimmed

2 teaspoons olive oil

1/4 cup water

Lemon wedges for garnish

Instructions:

*preheat oven to 450 degrees.

*Flatten chicken to even thickness. In a bowl combine the panko crumbs, Parmesan cheese, Italian seasoning and a pinch of salt (I didn’t add any salt) and pepper. Set aside.

*Melt butter in microwave. Set aside.

*Pat chicken dry and lightly brush on each side with the melted butter. Transfer to bowl with breadcrumb mixture and flip until well coated, pressing gently to adhere.

*place chicken on parchment lined baking sheet and spray evenly with cooking spray.

*roast at 450 for 15-18 minutes.

*meanwhile make the green beans. Add olive oil to pan. When hot add green beans, salt and pepper. Stir for about 1 minute.

*add 1/4 cup water. Cover and cook until tender, 6-8 minutes.

*when the chicken is done roasting, remove from oven and top chicken with marinara, basil and mozzarella.

*Return to oven until cheese is melted, 5-6 minutes.

To serve: plate chicken with green beans . squeeze lemon over green beans and sprinkle with a bit of Parmesan cheese and more basil if desired.
