Hearty Chicken Bake

This Hearty Chicken & Rice bake is a way healthier version of a recipe that I used to make years ago.

The old version called for canned cream of mushroom soup (so high in sodium and highly processed) and traditional inflammatory seed oil Mayo.


I found a delicious homemade “work around” for the canned the cream of mushroom soup and my healthy avocado oil based Mayo make this dish a healthy and scrumptious alternative to the old version that my husband missed so much.


You can make it with any kind of rice…but I’ll admit it’s a little trickier with cauliflower rice, but totally doable.


Either way, it’s really yummy and a perfect way to welcome cooler evening temperatures!



Hearty Chicken Bake

Ingredients:

3 cups cooked rice (white or brown)

OR 16 oz uncooked riced cauliflower (about 3 cups)

1-2 stalks of celery, sliced

1  tablespoon olive oil

1 cup onion, chopped & divided

8  ounces mushrooms rinsed and sliced

1/2 tsp salt

1/4 teaspoon pepper

1⁄8 teaspoon garlic powder

1⁄8 teaspoon fresh ground black pepper

1⁄2 cup chicken broth

1  teaspoon thyme, chopped

1⁄2 cup sour cream or Greek yogurt

3 boneless chicken breasts

2/3 cup homemade healthy Mayo (see note below) or regular preferred

1/4 teaspoon curry powder

1/2 teaspoon smoked paprika

1/4 teaspoon thyme (fresh or dried)

Instructions:

Heat the oil in a large pan over medium-high heat.

Add 1//2 cup onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes.

Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 10 minutes.

Add the sour cream, and toss to combine.

Add homemade Mayo, curry, paprika and thyme to the pan. Set aside.

Combine rice, celery, 1/2 cup onion and salt and pepper. Place in baking dish. Arrange chicken breasts over rice and spread mushroom mixture over the surface. Bake at 350 for about 45 minutes or until browned and bubbly.

NOTE:

Healthy Mayo

3/4 c avocado oil

1/4 c Greek yogurt

1 egg

1 tsp dried dill

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1 tsp apple cider vinegar

1/2 tsp pepper


Immersion blend
