 1 (14 oz) can of diced tomatoes

 4 cups vegetable broth

 1 (14 oz) can of chickpeas, drained and rinsed

2 cups cooked, shredded chicken breast

1 cup coconut milk (or almond milk for a lighter option)

2 cups fresh spinach (or kale) Juice of 1 lemon

Salt and pepper, to taste

 Fresh parsley, chopped, for garnish


Instructions

1. Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.

2. Build the Flavor

Add the carrots, celery, and red bell pepper. Stir in the smoked paprika, cumin, turmeric, and chili flakes. Cook for another 5 minutes to soften the vegetables.

3. Simmer the Base

Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.

4. Add Protein and Creaminess

Stir in the chickpeas, shredded chicken, and coconut milk. Simmer for another 10 minutes, allowing the flavors to meld together.
