Parmesan Crusted Cod


Moist, flavorful...easy...and so good!

I'm seriously not convinced that you could get something this good out...

Home cooking is so much more delicious and so far superior from a nutritional stand point...

Parmesan Crusted Cod


Ingredients

  • 1 lb. Fresh wild caught cod

  • salt & pepper

  • fresh lemon juice

  • 2 tablespoons homemade mayo-see note) OR Mayo of your choice

  • 1/2 teaspoon garlic powder

  • 1/3 cup shredded Parmesan cheese

  • 1/3 cup Panko Breadcrumbs

  • 1 Tablespoon fresh thyme

Instructions

  1. Preheat oven to 400 degrees.

  2. Lay a piece of foil on a baking sheet and spray with nonstick spray.

  3. Lightly squeeze fresh lemon juice on both sides of the cod and then lightly salt and pepper. Lay fish on the foil.

  4. Mix together the mayonnaise and garlic powder. Spread a thin layer on top of the fish.

  5. Sprinkle fish with Parmesan cheese and then the Panko bread crumbs and Thyme

  6. Bake for about 15 minutes or until fish is cooked through. 

  7. Sate internal temperature for fish is 145 degrees.

  8. Turn oven to broiler and broil on how for a minute or so to brown. (Watch carefully to avoid burning)


Serve with sweet potato and broccolini or sides of your choice.


NOTE: This recipe uses 2 Tablespoons mayonnaise, which isn’t very much for a pound of fish.

If, however, the use of commercial Mayo feels uncomfortable for you, a healthier option would be to make your own.
