PEACH, BLUEBERRY AND GOAT CHEESE SALAD WITH SWEET PEACH DRESSING




I love peach season! I love ripe juicey peaches! They always make me think of summer in full swing… those lazy, hazy summer days, pool days and kids running around in dripping swim suits!


They also add some pizzazz to my normal fruit repertoire which generally consist of blueberries, blackberries, strawberries…you know, all the berries. Don’t get me wrong, I love berries, but it’s so nice to mix it up a bit and peaches are just so good!


Plus, with all of the amazing benefits they provide it’s deliciousness you can feel good about!


Not only do peaches provide us with vitamins A and C, peaches also contain polyphenols and anti-inflammatory antioxidants that can limit the release of inflammatory cytokines and histamines into circulation.

This makes peaches an excellent treatment for skin inflammations.


If you love peaches, you’re gonna love this salad!


PEACH, BLUEBERRY AND GOAT CHEESE SALAD WITH SWEET PEACH DRESSING

For the salad:

4 cups loosely packs finely chopped kale

2 ripe peaches, chopped

1 cup blueberries

1/2 cup toasted walnuts

1/2 cup finely chopped red onion

1/2 cup goat cheese crumbles

1/2 cup chopped fresh basil

For the dressing:

Sweet Peach Salad Dressing

* 1 medium peach, very ripe

* ¼ cup olive oil, extra virgin

* 1/2 lemon, juiced (1-2 tablespoons, to taste

* 2 teaspoon honey or hot honey for a subtle kick

* ½ teaspoon sea salt

Instructions:

* Combine the Sweet Peach Salad Dressing ingredients in a blender or small food processor until very smooth. Taste and adjust the seasoning, adding more honey or salt as desired.
