Peruvian Chicken Ragout Recipe

Ingredients:

• 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

• 1 tsp chili powder

• 1 tsp smoked paprika

• 1 tsp ground cumin

• ½ tsp salt

• ½ tsp black pepper

• 1 medium onion, chopped

• 2 cloves garlic, minced

• 1 Tbsp olive oil

• 1 (28 oz) can diced tomatoes (fire-roasted for more flavor, if available)

• 1 (14 oz) can chicken broth (low sodium)

¾ cup quinoa, rinsed

• 2 cups fresh spinach, roughly chopped

• Zest of 1 lemon

• Lemon juice, to taste

• ½ tsp dried oregano or 1 tsp fresh (optional)

• ¼ tsp red pepper flakes (optional, for heat)

Instructions:

1. Season the Chicken – Toss the chicken with chili powder, smoked paprika, cumin, salt, and black pepper in a bowl.

2. Sauté – Heat olive oil in a Dutch oven over medium heat. Add the chicken, onion, and garlic, cooking for about 5 minutes until the chicken is browned.

3. Simmer – Add diced tomatoes, chicken broth, and quinoa. Bring to a boil, then reduce heat and cover. Let simmer for 20-25 minutes, until quinoa is tender.

4. Thicken Naturally – Uncover and simmer for an extra 5 minutes to allow the broth to reduce slightly. If you prefer a thicker consistency, mash some of the quinoa or tomatoes.

5. Finish with Freshness – Stir in spinach and cook for 2-3 minutes until wilted. Remove from heat and add lemon juice to taste, stirring to combine.

6. Serve & Enjoy – Garnish with lemon zest and an extra pinch of black pepper or chili flakes for added heat.

Ways to Customize & Make It Your Own

Make it grain-free: Swap quinoa for cauliflower rice and stir it in at the end.

Add more veggies: Bell peppers, zucchini, or carrots would work beautifully.

Want it creamier? Stir in a spoonful of Greek yogurt or coconut milk before serving.

Spice it up! A little extra chili powder or a pinch of cayenne will add some heat.
