Quicha Pizza


I love this super easy and yummy dish! It eats like a cross between a quiche and a pizza!

It’s so versatile too!


You could virtually enjoy it for brunch, lunch or dinner! It serves like a personal pan pizza!


Add a simple salad of arugula, greens and a lemon vinaigrette for even more fresh flavor and a nutrient dense meal!


So easy to change it up too to suit your own taste. For example, the pepperoni is easily swapped out for sliced Turkey. Or omit meat completely for a meatless entree.


I think the fresh herbs really make it pop with flavor too.

Basically any "fresh" vs dried herbs will work!

You could even top it with a few dollops of basil pesto.

So many options! I hope you love it!

Yum!

Ingredients:

4- 6" or 1 burrito sized tortilla ( I use Siete grain free tortillas- chickpea)

3 eggs

1-2 Turkey slices or cooked chicken, etc

1 T fresh thyme leaves

1 T fresh Basil thinly sliced

Salt and pepper to taste

1-2 T red onion, diced

2-3 T green bell pepper, diced

1/2 cup sliced Cherry Tomatoes

1/2 cup mozzarella cheese, grated

2 T Parmesan cheese

1 tsp Trader Joe's Soffritto seasoning blend

Directions:

Preheat oven to 400 degrees.

Place tortilla in 9-10 inch oven safe pan or casserole dish.

Place eggs in pan. Sprinkle with a bit of salt and pepper.

Sprinkle with the fresh thyme.

Add sliced Turkey, chicken or diced pepperoni, onion and bell pepper.

Add halved cherry tomatoes.

Cover with mozzarella cheese.

Sprinkle with the fresh basil.

Sprinkle with Parmesan cheese.

Shimmy tortillas down a bit for maximum coverage and even out mixture.

Lightly break eggs or leave unbroken if you prefer.

Bake in oven for 10-15 or 20 minutes until eggs are set to your liking and the cheese is nicely melted.


Remove from pan or casserole with spatula

(Should easily lift out after a minute)
