Quick and delish Beef (or Turkey) Stir Fry




This incredibly simple, yet so good, dish comes together super quick thanks to bagged coleslaw.


No need to grate carrots or cabbage. And with limited slicing and dicing it’s perfect for a busy week night supper!


Plus cabbage Is a nutrient superstar!

It’s packed with vitamin C and vitamin K. It’s anti inflammatory, good for digestion, heart healthy and the list goes on!!!

INGREDIENTS


--Stir Fry Sauce--


2 Tbsp Coconut Aminos (sold with the soy sauces) or soy sauce

1 Tbsp toasted sesame oil

1 Tbsp maple syrup

1 Tbsp siracha –or less if you prefer it not spicy (Yellow Bird brand)


--Stir Fry--


One 14-16oz bag coleslaw (combination of cabbage and carrot)

3 green onions

½ Tbsp avocado oil

½-1lb ground turkey

2 cloves garlic, minced)

1 Tbsp fresh ginger, minced

Pinch salt and pepper


DIRECTIONS

  1. Prepare stir fry sauce first. In a small bowl stir together the coconut aminos (or soy sauce), toasted sesame oil, siracha and maple syrup. Set the sauce aside.

  2. Slice the green onions, mince the two garlic cloves. Peel knob of ginger and grate or finely mince.

  3. Heat a large skillet over medium heat. Once hot add the avocado oil, ground turkey, garlic, ginger, and a pinch of salt and pepper. Cook until turkey is cook through about 5 minutes. 

  4. Add the coleslaw and continue to cook until the cabbage mixture is slightly wilted or to taste. Stir in the prepared sauce and the green onions.

Serve over rice, brown rice or riced cauliflower.
