Quick Banana Bread Cake

This banana bread cake is so delicious and just couldn’t be easier to make!


It’s low carb, gluten free, high in protein too!


You can adjust the sweetness to your taste making it a really versatile snack, breakfast or dessert.


Keep in mind that the ripeness of the banana will affect the sweetness as well!

Riper bananas are sweeter than less ripe bananas…


I love the @hukitchen.official chocolate chips! I use them for everything! Just a few simple ingredients with no added sugar or junk! They’re just so good!



QUICK BANANA BREAD CAKE

INGREDIENTS:

* 1 egg

* 1 small banana or 1/2 large

* 3 tbsp almond flour

* 1 teaspoon maple syrup (or to taste)

* 1 tbsp chocolate chips (divided)

* Sprinkle of cinnamon

* Chopped pecans to taste

INSTRUCTIONS:

* In a medium bowl, mash up the banana with a fork

* Crack the egg into the bowl and mix together. 

* Add the almond flour & maple syrup. stir to combine.

*Mix in half the chocolate chips and a few chopped pecans if desired.

* Pour the batter into a greased mug or small microwave-proof dish, or divide between 2 small dishes.

* Sprinkle the top with the remaining chocolate chips.

* Sprinkle with cinnamon

* Add a few more chopped pecans to taste

* Microwave on high for 90 seconds for shallower dishes and up to 2 1/2 minutes for a single deeper mug

* Stop at 90 seconds and see if it’s done; if not, microwave at 30 second intervals (so it doesn’t overflow)
