Shrimp Scampi with spinach and garnished with Parmesan cheese and fresh basil

Ingredients
* 1 pound shrimp peeled and deveined
* 3 tablespoons olive oil divided
* 5 cloves garlic minced (divided)
* 1 1/2 teaspoons salt
* 1/4 teaspoon red pepper flakes
* 1/2 cup chicken broth
* 3 tablespoons lemon juice
* 4 tablespoons butter (or ghee)
* 2 cups baby spinach
* 1/4 cup parsley finely chopped
* 2-3 green onions
* Chopped or chiffonade of Basil to taste
* Parmesan cheese to taste
Instructions
* In a large bowl, combine the shrimp, 1 tablespoon of the olive oil, 2 cloves of the garlic, and salt. Toss to coat and marinate for 20 minutes.
* Heat remaining olive oil in a frying pan over medium heat. When hot, add shrimp and cook 1-2 minutes per side until shrimp are just pink. Remove shrimp with a slotted spoon to leave liquid in the pan.
* Add the remaining garlic and red pepper flakes to the pan. Cook until fragrant, about 30 seconds.
* Add broth and lemon juice. Cook until reduced by half, about 5 minutes.
* Add butter and cook until melted and the sauce thickens. Add spinach and cook until just wilted. Add shrimp back to the pan. Sprinkle with parsley and green onion and warm for 1-2 minutes before serving. Top with Basil and Parmesan cheese. Serve over pasta or with french bread, if desired.
