This Strawberry Vanilla Chia pudding is so satisfying, delicious and healthy too!!! It’s full of fiber and high in protein which will help you stay full longer and is so good for your digestion! Chia seeds are also a rich source of omega 3 fatty acids making them heart and brain healthy…


I use a really low sugar vanilla yogurt (two good vanilla is my fave- it has 2 grams of sugar) and I use no sugar added dark chocolate chips (Get back to human) which makes this a really healthy breakfast, a guilt free snack or even a light, healthy dessert. The whipped cream is optional but there are several healthier out there as well…so why not??

Strawberry Vanilla Chia Pudding

Ingredients:

1 1/2 cups sliced strawberries (I left the leaves on mine, but feel free to remove)

1/2 cup milk of your choice (I used macadamia nut milk)

1 cup two good vanilla yogurt

6 tablespoons ground chia seeds

1 1/2 T maple syrup or to taste

Chocolate chips (I use no sugar added dark)

Chopped nuts


Directions:

Blend strawberries and milk. You should have about 16oz of puréed strawberries. Pour into a bowl. Add yogurt, chia and maple syrup to taste. Cover and refrigerate for an hour or two (or overnight). Remove to serving bowl and top with chocolate chips and chopped nuts…and/or whipped cream..there are several healthy versions out there!
