Sweet Potato Egg Boats

I love these egg boats! They’re so easy and quick to make.

They’re so satisfying and such a great option for breakfast, lunch or even dinner!

I don’t really use a recipe but here’s how I made them…

1. Pierce and microwave a medium sweet potato for about 5 minutes until tender.

2. When cool enough to handle, slice in half lengthwise and scoop sweet potato pulp into a bowl, leaving skin intact.

3. Add about 1 tsp ghee (or butter if you prefer) and 1/2-1 tsp of everything but the bagel to the mixture and stir to combine.

4. Refill skins leaving a nest or a boat for our eggs. Gently add an egg to each boat. Top each egg with a pinch more of everything but the bagel.

5. Bake a 400 degrees for 15-20, depending on your preference (about 15 minutes for jammy yoke-but ovens vary)

6. Remove from oven and top with fresh basil and a bit of sriracha if desired.

Serve with a simple green salad and sourdough toast.
