Watermelon Salad

Oh! This salad! Delicious, festive…so easy and a great pick for your summertime get togethers!


It’s a little sweet, a little savory and so flavorful all around!!!


Just don’t forget that fresh squeeze of lime juice at the end…I think it makes everything pop!

Enjoy!!


INGREDIENTS:

* 4 cups baby spinach, about 4 ounces

* 1 pound bite sized cubes seedless watermelon, about 4 cups

* 1/2 small red onion, slivered, 1 ounce

* 1 cup feta cheese, cut into cubes or crumbled, 2 ounces

* 1 small bunch of basil, chopped about 1/2’cup

* Olive oil and reduced balsamic for drizzling

* Finishing sea salt for sprinkling

* Squeeze of lime before serving!

INSTRUCTIONS

1. toss salad ingredients altogether in a large serving bowl.

2. Drizzle with the olive oil of your choice and reduced balsamic vinegar. You can also use regular balsamic but the flavor won’t be quite as rich.

3. Sprinkle with a small amount of the finishing salt.( I use maldon salt)

4. Add a squeeze of fresh lime juice (this will really make it pop!)

5. Serve immediately
